The “Strangest (Sh1tty) Starter”

This one was supposed to head in one direction but then took a few turns along the way and ended up pretty good. I was originally going to go for a cheesy prawn ½ chilli popper type appetiser but then when I went shopping, the good ol’ mushrooms called my name and I grabbed them. I bought a bag of cleaned and shelled prawns and the rest was done on the fly and it ended up being a “lick the bowl clean” dish! The Sh1tty part stems from the fact that the key ingredients either eat it or grow in it!

INGREDIENTS (Serves 4-6):

8-12 Black Mushrooms  (People won’t be satisfied with only one)

6-8 green and red birds eye chillies chopped

2 heaped Tsp Chopped Garlic

1 Large onion chopped fine

1 Handful chopped Chives

1 Chourico sliced and then chopped in ¼ pieces

1 Handful Butter

1 Splash Olive Oil

1 Lemon squeezed (NO PIPS!!)

Cheese – Parmesan to cover each filled mushroom or Camembert as a base inside each mushroom

Salt & Black Pepper to taste

METHOD:

Get a wok type or thick bottomed pan on the stove and throw in the butter and oil. Once heated toss in the onions, chourico, garlic and chillies, stir regularly. Once the chourico is done, add the lemon juice then toss in the prawns. In the meantime de-stem the mushrooms and place the Camembert inside if you going that route then put the mushrooms on a baking tray. When the prawns are done throw in the chives then remove from the stove and fill each of the mushrooms with the filling. If you using Parmesan, add the shavings or grated cheese to coat each mushroom. Cover with tinfoil (shiny side down) and bake in pre-heated oven for 25 min @190C.

When done, plate and garnish with parsley or fresh chives and serve immediately with fresh buttered French loaf. There you have it, the “Strangest (Sh1tty) Starter”, enjoy! Wish You Were Here
